With the holidays coming up it can be hard to find healthy options for the brunch table. Try out this delicious version of my mom's "Farmers Breakfast".
Calories: 195 | Protein: 15 | Fat: 12 | Carbs: 6
½ onion (diced)
½ pound lean sausage
1 green or red pepper (diced)
1 cup mushrooms (diced)
1/2 tbsp. oregano
Salt and pepper, to taste
Optional: ¼ cup low fat shredded cheddar cheese
Heat oven to 350° Grease 8” round baking dish
In a sauté pan brown and chop sausage. Remove sausage and cook the diced onion and peppers in remaining sausage grease.
Stir in all ingredients. Sprinkle a light layer of cheese over the top.
Bake uncovered for 30-35 minutes or until golden brown and fully cooked (pierce with fork to check doneness—if fork comes out clean, it’s done!)
If this is in your workout window replace 4 egg yokes with additional egg whites and add 2 cups of cooked diced potatoes (can use the grease from sausage).
